Ingredients:
- 1 cup all-purpose flour
- 1/2 cup coconut oil, melted
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup plant-based milk such as almond or soy
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegan chocolate chips Taza Chocolate
- 1/4 cup chopped nuts optional
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, whisk together the melted coconut oil, brown sugar, and granulated sugar until well combined
Add the plant-based milk and vanilla extract to the mixture, and whisk again until smooth
Sift in the all-purpose flour, baking soda, and salt
Stir the dry and wet ingredients until a dough forms
Fold in the vegan chocolate chips and chopped nuts if using into the cookie dough
Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a few inches apart
Gently flatten each cookie dough ball with the back of the spoon or your fingers
Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown
Remove the baking sheet from the oven and let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely
Once cooled, enjoy your delicious vegan chocolate chip cookies!
