This curry-dry potato chips recipe is easy, quick, and tastes great. It uses thinly sliced potatoes and a tasty masala made from tomatoes, onions, and spices. It goes well with either roti or rice as a side dish.
Ingredients:
- 4 medium-sized potatoes, thinly sliced
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
Heat oil in a pan over medium heat
Add cumin seeds and let them splutter
Add chopped onions and saut until golden brown
Add ginger-garlic paste and cook until the raw smell disappears
Add chopped tomatoes and cook until they turn soft and mushy
Add turmeric powder, coriander powder, red chili powder, and salt
Mix well
Add thinly sliced potatoes and mix until they are coated with the masala
Cover and cook for about 15-20 minutes, stirring occasionally, until the potatoes are cooked and crispy
Garnish with fresh coriander leaves
Serve hot with roti or rice
